From Olive Waste to Food Innovation: Students Explore Sustainable Cheese Design
As part of the Food Science and Culture program at the Università degli Studi di Udine, secondary school students participated in a challenge to develop branding concepts for a spreadable cheese enriched with olive stones — a by-product of the olive oil industry.

We are happy to announce that the Kick-Off Meeting of the VALOstones Project "Valorization of olive stone by-product as a green source of innovative and healthy value-added products in the context of the circular bioeconomy and sustainability" was held on 28 September 2023! VALOstones is part of the #PRIMAPogram supported by the European Union and funded by the national funding bodies of five Participating States for a period of 3 years, starting from September 2023.
